The Madison County Sheriff’s Department has a position open for a Cook at the Criminal Justice Center. This is a full time position that will be a forty (40) hour work week. The work is performed in a Jail setting and involves preparing and serving meals for the inmates housed at the Madison County Jail. The position will report directly to the Kitchen Manager.


Duties/Responsibilities:

• Prepares meals for inmate detainees in the county correctional facility.
• Work from a prepared menu with specific recipe to prepare Breakfast, Lunch, and Dinner.
• Will prepare meals that meet various special dietary/religious or other needs that vary from the regular prepared menu.
• Supervise inmate workers in the preparation of meals.
• Supervise inmate workers in serving trays, not only insuring proper food items being served, but also proper portion sizes, special diet trays, and food quality/presentation.
• Supervise inmate workers cleaning the kitchen and kitchen equipment.
• Maintain kitchen records for meal counts and utensils log.
• Maintain kitchen equipment and the sanitary conditions in the kitchen.
• Maintain open communication with Kitchen Manager and Correctional Officers to insure uniformity, quality, and continuity.
• May receive orders of supplies from vendors.
• Insures that stock is rotated.
• Performs related duties as required or directed.

Qualifications:

• Knowledge of materials and methods used in institutional or commercial food preparation.
• Knowledge regarding the care and use of kitchen equipment.
• Ability to supervise and work with inmate help.
• Ability to work on your feet for long periods of time in a closed, secure environment.
• Must have the ability to prepare pre-existing menus, according to recipe, at consistently high quality levels.
• Must have the ability to work varied shifts which will include weekends and holidays.
• Ability to follow basic security protocols, once trained.


Requirements:

• High School Diploma or equivalent.
• Experience in volume cooking in an institution or commercial firm or any satisfactory equivalent combination of experience and training that demonstrates the ability to perform the above-described duties as determined by the Jail Administrator.
• Must pass an extensive background investigation.
• Must pass a drug screen.
• Must pass a Physical and Mental evaluation.
